Why I bake at night…
“You should try waking up at 6 am so you can be tired at night. Not only starting to bake at 11pm. That‘s not normal!”. These were the words he uttered shortly before he said goodnight.
‘Hmmm”, I thought. And with a smile I realized that I guess nothing much has changed since I was a teenager. I’m 33 now and on a year-long “time-off from work” to allow myself to take a nice looooong breather. It’s what I’ve been planning for a while now.
Now I find myself in a completely new daily routine. I sleep til at least 10am and somehow as the day goes on I get more and more energetic. I used to be like this as a teenager too (except for having to wake up early for school/uni). However, years of working in a high-pressure corporate environment tired me to no extent. I could barely keep my eyes open later than 10pm. Now, I am back to my pre-adulthood, pre-moving to Germany, pre-divorce state and it is pure bliss! Just wish I could go back to the pre-getting fat phase. Hmmmm…My latest hobby is not really helping with that either:-)
Recently I have discovered my love for baking cupcakes. I don’t like baking any other kind of cakes – only cupcakes. I firmly believe that no person on this planet can be unhappy when holding a cupcake in their hand.
I’m very very new at this baking thing so this road is still very untravelled. But I really am enjoying it – collecting recipes, sourcing products, watching YouTube decorating videos, having my friends sample my attempts etc. etc.
The “problem” is the timing – I usually only end up baking at around midnight. That’s when I get the most inspired! Oh well, I’m not harming anybody, am I? 🙂
Tonight I tried a wonderful recipe for Banana Chocolate Cupcakes with Chocolate Fudge Frosting. It’s quick and easy, deliciously rich in flavour and super moist. Definitely one to try out!

Oops (!) – I forgot to add the egg, I just realised now… yet still it came out perfectly moist and delicious. Seems to be flop-proof! *happy dance*
